The nostalgia of opening an old fashioned tin of biscuits, the crumple of the sheets of wax paper and those little paper cases cradling each compartment that we all remember. This tin of assorted biscuits is a collaboration of recipes made by my team and me – Nadine x
Ingredients:
Hazelnut Shortbread: unsalted butter, demerara sugar, egg yolk, vanilla paste, emmer wheat flour, crushed hazelnuts, salt
and caster sugar
Hand-iced Gingerbread: plain flour, butter, brown sugar, honey, golden syrup, ground ginger, spices, bi-carb soda, pasteurised egg white, icing sugar, lemon juice, gel paste for colour
Amaretti: almond meal, sugar, egg white, pistachios, sour cherries, honey, lemon zest, almond extract, salt, icing sugar
Chocolate & Sour cherry cookies: rolled oats, dark chocolate, brown sugar, butter, plain flour, sour cherries, eggs, vanilla, baking powder, salt
Soft-glazed Gingerbread: plain flour, butter, sugar, brown sugar, treacle, golden syrup, eggs, cocoa, ground ginger, spices, bi-carb soda, salt, white pepper, icing sugar, rum
Serving and Storage: Keep in a cool dry place. Will last up to 6 weeks.
