Food writer Emiko Davies* says in Florence on the Thursday before Easter you will find little buns called Pandiramerino in bakeries all across the city. We decided to take our little community in Woolloomooloo to Florence by creating our own version of this delightful bun. We wanted to push the boundaries of a hot cross bun by spicing up your lives a bit.
Ingredients: Flour, milk, fresh yeast, castor sugar, eggs, butter, salt, currants, cardamom, orange zest, rosemary and cinnamon.
Serving and Storage: Best consumed same day but will last overnight if kept airtight in a cool, dark place. Do not refrigerate. Heat up in a moderate oven until warmed through.
