For Mother’s Day, we are thrilled to be collaborating with Southern Wild Co to honour Mother Nature and our gratitude for the beautiful place we call home. I have created a Bush Quince cake inspired by the place I grew up which will be paired with the Bush Magic Candle crafted by Tania at Southern Wild Co .
We connected over our mutual love of the Australian landscape and in particular the bush poetry that celebrates it. The botanicals we both use as makers evoke our sense of place in the world and are an ode to the comfort we feel when we return there. Quite often this transportation can happen simply through scent.

“A gnarly quince tree, thorny blackberry bushes and the sound of the creek flowing is vividly nostalgic for me. That’s as warm and close to any feeling of Mother I have”.

In creating this cake I have explored where I grew up as ‘Mother ‘, the bush surrounds and how I have been grounded by that upbringing and keep calling back to it for reassurance.
Layers of hazelnut and wild honey sponge. Bay leaf custard folded with cream fraîche.
Poached quinces and blackberry compote layers.
